Job Description

Position Title - Head Brewer

Location - Byrnihat Meghalaya


About the Role:


Operations Planning & Budgeting

  • Lead the operations planning for the brewery based on monthly forecast shared by Corporate. Schedule monthly and weekly production and achieve alignment with targets set for volume, quality, cost etc
  • Engage with the sales team to understand market penetration and product off-take and anticipate sales growth to effectively plan for production and dispatch
  • Formulate the overall Brewery budget basis consolidated inputs. Work closely with the CSCO to finalize budget for corporate approval
  • Ensure resource availability (raw material, packaging, utilities, logistics, manpower etc.). Plan for optimal utilization to maximize productivity and minimize costs.


Operations and Dispatch Management

  • Monitor procurement and quality of raw materials, malt from contract malting units, adjuncts, yeasts from CTC, balancing existing inventory and reuse of resources (e.g. yeast reuse)
  • Oversee brewing and production operations to ensure timely dispatch of quality products as per defined internal and statutory guidelines
  • Coordinate with local sales head for tentative planning on week wise and day wise dispatch; Monitor dispatch basis dispatch notice received, identify and resolve for inefficiencies
  • Monitor issues causing losses such as inefficiencies, material non-availability, manpower, etc. Engage with the CBU team and supervisors to plan for next steps
  • Drive resolution of issues related to process and operations related to manpower, material, capacity constraints, material mix, etc. and customer compliances at blossom brew in coordination with UBL and CBU teams

Conduct product trials as directed by HO and CTC team; Review product performance, prepare reports and share insights with the HO team to supporting decisioning on next steps.


Operations Review


  • Review daily operations through key parameters such as production volumes, bottling efficiency, consumables, inventory, expenses, safety incidents etc.
  • Lead daily meetings with the direct reports and CBU team to track the actual vs. daily target achievement on key parameters; Interpret and provide course correction inputs on the variance
  • Participate in DCS; Review flagged issues raised by the brewery leadership team, discuss, design, and implement required corrective actions, lead corrective actions for production and maintenance operations

Prepare KPI and KAI reports and Present production and maintenance activities unit performance reports to the HO and unit leadership in MCRS.


Quality Tests and Sensory Evaluation

  • Conduct all required quality tests and taste sessions for water, brew, filtration and carbonation, lager beers and lauter tanks; Monitor real-time indicators on quality parameters and resolve issues, in case of any deviations
  • Drive execution of sensory evaluations and protocols on daily basis; Review sensory evaluation findings to draw inferences and identify red flags
  • Review product, process and raw material quality matrix, identify red flags and conduct root cause analysis to identify issues; develop action plan to resolve. Share quality report with CTC team for review.
  • Collaborate with the microbiologist to keep check on health indices of the beer
  • Collaborate with QA team to identify deviations in quality parameters & sensory evaluation and determine course-corrections to be implemented

Conduct random check of raw material samples and provide approvals for usage.


Audit and Compliance


  • Ensure all statutory compliances including labelling and packaging requirements, factory and boilers maintenance, infrastructure changes, billing ledger and inventory upkeep etc. are met for the brewery
  • Facilitate process and quality audits in the blossom brew in collaboration with CTC; Review audit reports and work with CTC, HO and CBU team for closure of audit queries
  • Support HO team in conducting financial and vendor audit in the brewery by providing accurate data and support during audits.

Regulatory & Policy Management

  • Stay updated on local, state, and national regulations related to the alcohol and beverage industry, with a specific focus on pricing revisions, approvals, and payment policies.
  • Develop a deep understanding of State Government pricing policies, excise regulations, and payment frameworks to effectively represent organizational objectives and recommendations before government authorities.
  • Monitor changes in regulatory and policy frameworks and assess their impact on business operations and commercial activities.

Government & Stakeholder Engagement

  • Build, strengthen, and maintain strong working relationships with key government departments and agencies, including State Excise officials, Beverage Corporation representatives, pricing committees, and other regulatory authorities.
  • Maintain continuous engagement and open communication with government stakeholders on matters related to pricing, payments, registrations, and other commercial priorities.
  • Represent the organization in discussions with government authorities to facilitate timely approvals, issue resolution, and policy alignment.

Pricing & Commercial Operations

  • Collaborate closely with the Sales and Corporate Affairs teams to understand government pricing policies and establish robust Standard Operating Procedures (SOPs) for pricing submissions and approvals.
  • Work with cross-functional stakeholders to finalize pricing matters and ensure execution of all required processes and documentation in compliance with State Excise regulations.
  • Drive timely registrations and approvals, including brand registrations, label registrations, pricing approvals, and related permissions, in partnership with the Commercial team.

Payment Management & Process Facilitation

  • Develop a strong understanding of government payment policies, particularly those related to Beverage Corporations, to effectively track receivables and overdue payments.
  • Coordinate with relevant government departments and stakeholders to streamline payment processes and ensure timely settlements.
  • Take ownership of following up on pending payments and resolving payment-related issues with government authorities.

Compliance & Risk Management

  • Ensure adherence to all applicable laws, excise regulations, and statutory requirements related to pricing, approvals, and payments.
  • Respond to statutory notices and regulatory queries related to pricing and payments in consultation with the Corporate Affairs and Legal teams.
  • Support the organization in mitigating regulatory and compliance risks through proactive stakeholder engagement and process governance.
